National Cupcake Week has come round again so we’re busy unleashing our inner domestic goddess cooking up some of our favourite recipes in honour of what has to be one of the best foodie events in the calendar. However we are after something a little more exciting from our confectionary that simply a vanilla sponge. That’s why we’ve picked one of the most exotic cupcake recipes we could find to add a little spice to teatime.

Red Thai Curry and Coconut Cupcakes

Granted this recipe sounds a little scary and curry is definitely not a flavour we’d usually look for in a cake, however the small amount of curry pasted used in this recipe gives a slight aromatic flavour without being overpowering. More coconut, lime and citrus than garlic and spice – thank god.

Ingredients: 125g soft unsalted butter, 50g soft light brown sugar, 120g plain flour, 2 eggs, 70g caster sugar, ½ tsp vanilla extract, ½ tsp Red Thai curry paste, 2 tsp baking powder, 1 tbsp coconut milk, 1 grated lime zest. Icing: 100g soft unsalted butter, 15g desiccated coconut, 200g icing sugar, ½ tsp vanilla extract
